Goi Rau Muống Tôm -This is one of my favorite salad dish. Shrimp water spinach salad or ung choi, with sliced carrots, fried crispy onions, roasted peanuts, pickled onions, basil, and shrimp, lots of shrimps, and dressed with southern Vietnamese style fish sauce... a little sweet and sour, it taste great.
Water spinach salad is something most Vietnamese enjoy. They are crunchy, with a bit of sour, salty, spicy and sweet. A pleasant aroma of roasted peanuts, along with southern style fish sauce. I invite you along to the kitchen to prepare this salad dish. Extremely simple, but is delicious!
1 bunch of water spinach. Choose one with fresh green color.
½ pound of peeled shrimp (removed vein)
1/3 cup crushed roasted peanuts
1/3 cup of fried onion
1/2 cup of sliced pickled carrot (Vietnamese supermarkets will have them)
Some chopped basil
1/3 of white onions dipped in vinegar, sugar, pinch of salt (should tastes a little sweet and sour)
Vegetable knife to slice the water spinach.
